I wanted to make some St. Patrick’s Day themed treats for Elliott’s daycare party and decided to make these pots of gold chocolate cupcakes.  To add an element of fun, I added leprechaun legs and had them sticking out as if the leprechaun had jumped into the pot of gold.  The leprechaun legs were sculpted out of modelling chocolate and the gold was made by dusting course sanding sugar and yellow edible confetti with gold dust.
