My niece Leah had her 5th birthday party this weekend.  I’ve made her birthday cake every year – except last year.  Last year, I was so busy with our move that I didn’t have time to make her cake.  So this year I had to make it up to her!  I asked her what kind of cake she wanted for her birthday and she said “Elsa”.  I wasn’t surprised.  I think you’d be hard pressed to find a little girl who is not obsessed with Elsa and everything Frozen.

Elsa’s ice castle was made from melted isomalt sugar and poured into a mould I made.  The mountain was shaped out of rice crispy treats and then covered in fondant.  Elsa was hand sculpted with modeling chocolate.
