This Cherry Blossom buttercream cake was made for our family Mother’s Day Celebration.  I made an eggless chocolate cake with alternating layers of Espresso Buttercream and Aquafaba Chocolate Mousse.  It was my first time working with Aquafaba and I have to say I was pleasantly surprised.  I could not even tell it was chickpea brine.  I can wait to try more Aquafaba recipes!  I hand scraped the chilled buttercream to achieve the bark effect.  Then I piped the Cherry Blossoms, leaves, and branches.
